Normally I don't like to put carrots or soy sauce in my egg roll recipe but then again this is thai egg roll style so I can understand why they use a lot of carrots in their recipe. I'll have to try this recipe sometime in the future.

we call these egg rolls... spring rolls are made with a clear wrapper that's not made out of flour, and it's not fried either it's very fresh.

I like the alternative recipie to the Lao one I learned! I'd like to point out that though the spring wrappers are delicate you can work with them. when you put the meat on the wrapper fold the end to the middle and push backwards forming the meat into a tube. Then roll twice, fold both ends so the bottom edges align with the edge of your roll and finish rolling. If they come out a little flat looking puff them with your fingers by gently squeezing. I really love this video!

Fish sauce. They should have it in any town that has a decent population of Thai or Lao. If you don't want to use fish sauce you can use oyster sauce/extract which will actually smell better but gives it a different tase.
