Pour Coconut Oil in and boil it and throw in few mustard seeds and let it crack.Add few curry leaves followed by the onion pieces, chilli & ginger; fry for few seconds. Add mashed potatoes, pour water (preferably diluted coconut milk instead hmm yummy) add salt. Cook in low heat, once completed add coconut milk (home maderemember it) once boiled reduce the heat, cook (uncovered) till it become thick and creamy. Add rest of the curry leaves and stir well.

Being a Keralite I can tell that the recipe is almost right, few suggestions would be:-- Do not over mash the potatoes.- Preserve some coconut milk to add at the last (instead of oil), - For better result prepare coconut milk using raw coconut.And finally increase the audio quality, I can barely here you two, may be my pc speaker would be a problem.I hope that you two enjoyed what you cooked try this style see my next comment (Why they count characters gr.....) :-

This is not Kerala style Potato Stew. This must be North Indian Style Potato stew.Kerala Style is totally different. If you want the real recipe please contact a keralite.
