Great! Is it possible to add another step after this? Do you have any ideas of how to get your dog to do this without walking alongside it?

Reading your desc about not restraining the dogs foot makes me think of teaching a dog to hold something in its mouth. Everything I've read said put the object in the dog's mouth and hold his/her mouth closed. My GSD WILL NOT tolerate that (I've tried, it was worthless) and I'm at a loss for teaching hold it. Do you have ANY ideas?
